Beef and Scallion Stir-Fry

2 tbsp. reduced-sodium soy sauce
cloves garlic, finely chopped
2 tbsp. minced fresh ginger
1 1/2 lb. trimmed boneless top round or sirloin steak, thinly sliced across the grain
2 tbsp. olive oil
bunch scallions, cut into 1 1/2-inch pieces
shredded green cabbage
- In a medium bowl, combine the soy sauce, garlic, and ginger. Add the beef and stir to coat. Cover the bowl and marinate for 30 minutes at room temperature or at least 1 hour in the refrigerator.
- Heat the oil in a wok or large skillet over medium-high heat. With a slotted spoon, transfer the beef to the wok, reserving the marinade. Cook the beef, stirring constantly, for 1 to 2 minutes, or until browned on all sides. Remove the beef to a plate. Set aside and keep warm.
- Add the scallions to the wok and cook, stirring constantly, for 30 seconds. Add the reserved marinade and cook for 1 minute, stirring constantly to avoid burning. Add the beef and cabbage and cook, stirring constantly, for 2 minutes, or until cooked through.
