There are excellent recipes for cooking whole sturgeon, and not in the oven, but in a real oven, which, as you understand, is much tastier. I will share with you recipes of baked and stuffed sturgeon. These recipes were invented by the great chefs of the past years, so if you follow the instructions exactly, you will get a really tasty fish.
How to cook sturgeon - baked sturgeon
This is one of the most delicious recipes - such sturgeon can be tasted in far from every restaurant, but you can cook it yourself - easily. The fish should be carefully and properly gutted and rinsed, then lightly sprinkle with salt on the outside and rub well with salt on the inside. We wait for 5 minutes and again wash the sturgeon with cold water, then wipe a little with a towel and leave to dry. After that, you need to salt the sturgeon inside again, and add spices and a little black pepper.Then the fish should be slightly sprinkled with lemon juice and smeared with sunflower (or any vegetable) oil. At this preparatory stage is over. Now we take the form for the sturgeon, which is the most suitable in size, put two layers of foil into it and lubricate the foil well with vegetable oil. Next, put the sturgeon in the prepared form, pour dry white wine, seal the foil and put the form in a preheated oven for 5 minutes. After five minutes, we take out the form, open the foil and once again lubricate the sturgeon with vegetable oil (this time not too copiously). Again, put the fish in the oven and bake it until fully cooked. After that, we take out the form, carefully pull out the sturgeon and put it on some beautiful serving dishes - for example, on a large dish. You can decorate sturgeon with mint leaves, fresh parsley and thin slices of lemon. Also note that the fish must be served with the juice formed during frying.
How to cook whole sturgeon
Of course, not everyone will like stuffed fish, but the case with sturgeon is exceptional, because this fish is considered to be one of the best.In order to make a stuffed sturgeon, you first need to prepare the foundation for the fill. Put on a dish of boiled potatoes, carrots and greens. Then we prepare jelly and pour vegetables and greens with it, after which we remove the dish with pouring into the fridge for about 30 minutes. It is very easy to prepare the jelly: boil the broth over a low heat for an hour and a half. As soon as it boils down to 1 liter, filter it and, after cooling it down a little, remove excess fat. That's exactly this kind of filth and you need to pour on the prepared vegetables and then put in the fridge. Now prepare the stuffing for sturgeon. We cut onions into small cubes, rub carrots on a coarse grater, salt the vegetables and set the stew. Then boil the potatoes in salted water, then knead it, add a raw egg, a little flour and chopped finely green onions. We also need to chop and dill. Please note that you cannot mix potatoes, dill and carrots with onions - we should have three separate layers. Now proceed to cutting sturgeon. We clean the fish from the entrails, wash it well and salt it inside. Now we lay the stuffing inwards and sturgeon in layers and sew up the belly (this can be done with the help of a special culinary thread).Then put the fish in the oven and bake (it is better to put it on a baking sheet for more uniform roasting, but it can be in a special form). Bake the sturgeon to 45 minutes, then pull out a baking sheet, let the fish cool and put on a plate with prepared inlet vegetables. You can also decorate the sturgeon with red currants, olives and even put sour cream.
