Lobster rolls are a New England tradition, and downsizing them here turns a little lobster meat into an appetizer a large group can enjoy.

1 tbsp. fresh lemon juice
2 tsp. chopped fresh tarragon
1/2 tsp. kosher salt
1/4 tsp. cayenne pepper
cooked lobster meat
party-size potato rolls
1/4 c. salted butter
1 1/2 c. finely shredded hearts of romaine or iceberg lettuce
- In a small bowl, whisk mayonnaise, lemon juice, tarragon, salt, and cayenne. Gently stir in lobster. Chill mixture 30 minutes.
- Slice rolls and spread cut sides lightly with butter. Place, buttered sides down, on a griddle until golden and toasted, about 2 minutes.
- Mound bottom rolls with lettuce and lobster salad; replace top roll.
