Yesterday my baby girl turned 2. My son also "graduated" from his preschool class, so it was a big day in the Walker household, and the onus of that responsibility fell on my shoulders. It was one of the first times I've been sad to be here in this new place. Watching the other families of my son's classmates celebrate together was painful, and being the only one around to make my daughter's 2nd birthday a big deal was lonely. We had a good day "alone together" though, and we ended it with our all-time favorite family dinner. I even Sneaky Chef-ed the sauce by grating a bit of carrot into it and no one was the wiser.
It's so simple that it doesn't really count as a recipe, but here it is anyway. All-Time Favorite, y'all.
I started by grating some carrot and mincing half an onion and softening it in some oil. If I had some celery, I would've minced that and thrown it in, too.
I added a pound of ground beef and browned it, then poured in enough bottled marinara to make it soupy. Covered and simmered for an hour, then served over pasta with grated Pecorino Romano.
